Pulses
Legumes, also known as pulses, produce a lot of plant protein in a small space. The human body needs protein to build bones, muscles, skin and hair, the immune system, enzymes, hormones, nerves and many other important things. Legumes are therefore particularly important in a meat-free diet. Legumes also play an important role in supplying nutrients to the soil because their roots form a symbiotic relationship with nodule bacteria, which bind nitrogen from the air and convert it into soil nitrogen that can be used by plants. Peanuts, soybeans and clover, but also acacia, for example, are important legumes. Legumes are used as food and animal feed and for green manuring the soil.
