Vegetables
A healthy diet is impossible without vegetables: their enormous variety provides important nutrients such as vitamins and minerals, as well as high-quality forms of sugar, carbohydrates and fibre. Overall, this ‘premium class’ of our diet accounts for only about four percent of the total area under cultivation. Every vegetable has its season. Outside of this season, it either comes from far away, from a greenhouse or from the freezer. Seasonal vegetables not only taste better, they are also more environmentally friendly and usually healthier.
